According to Castiel, "Time is fluid, and on occasion we can bend it." Angels can become aware if there is a significant change to the timeline, however they cannot discern how a change happened. After the Fall destroyed the wings of all angels, it was revealed that the ability to travel through time was also connected to their wings.
