According to the wikipedia entry on Cassiel, in supernatural they switched the s for a t (Cassiel to Castiel) as a homage to the first initial of Thursday: The day that the show currently airs in the US. Cassiel is the Latin name of an angel in post-biblical Judeo-Christian religion, particularly that of the Kabbalah. Unlike many other angels, Cassiel is known for simply watching the events of the cosmos unfold with little interference.
